
Guide and podcasts for plant-based food experiences
How can kitchen and serving staff produce and present plant-based food so that guests choose it naturally? The answer lies partly in nudging. Together MeetDenmark and Danish Center for a Plant-Based & Organic Future have published a guide on this.
The guide includes useful advice and tips on how to work concretely with plant-based proteins and flavors, and how to “nudge” guests to make climate-friendly choices themselves.

Practical guide to plant-based food experiences
A few insights from the guide:
- The more meat you replace with plants – the more impact you can measure on the CO₂-balance.
- Plant-based food - is a new way of thinking about plants in the kitchen. It is no longer about “vegetarian food for vegetarians”, but about letting plant-based food take up more space in all dishes and for everyone.
- If you make the plant-based dishes the standard on the menu, many more guests will also choose them as the standard choice.
- You can absolutely become full on plant-proteins and satisfy both tastes and senses
